Ingredients
- 50ml Holy Grass Vodka
- 25ml Lemon juice
- 25ml Raspberry coulis
- 1 Egg white
- Garnish with finely grated Lotus Speculoos biscuit and skewered raspberries

Recipe
- Sieve the coulis to remove any raspberry seeds
- Add the coulis, vodka, lemon juice and egg white into a shaker and shake vigorously for 30s or until the egg has frothed
- Add ice and shake again until chilled
- Pour into a coupe glass
- Once egg foam settles on the top, finely grate speculoos biscuit over one half of the foam-topped glass
- Garnish with 3 skewered raspberries
