Banana bread became the ‘must-bake’ of the original Lockdown 2020, so for Lockdown 2021 we thought we’d jazz it up a bit with the addition of some Rock Rose Gin – Autumn Edition 🙂

Ingredients
- 1 ripe Banana
- 110g butter, melted
- 2 eggs
- 130g caster sugar
- 100g Raspberries
- 110g Self raising flour
- 3/4 tsp Ground cinnamon
- 1/2 tsp Salt
- Pinch of nutmeg
- 2 tbsps Rock Rose Gin - Autumn Edition

Recipe
- Mash the banana in a bowl with a fork
- Add the melted butter, eggs and sugar
- Mash the raspberries through a sieve, to remove the seeds, into the same bowl
- Beat on a low setting to smooth
- Sieve in the remaining dry ingredients and lightly mix
- Add in the Autumn Edition and stir to combine
- Pour into a lined loaf tin and bake for 1 hour, until a skewer comes out clean
- Allow to cool in the tin for around 10 minutes and then transfer to a wire rack
Best served with a lovely Autumn Edition Gin, Cushiedoo’s tonic and raspberry garnish!
