“When gorse is out of bloom, kissing is out of season.” Gorse can be found blooming all year round! Gorse flowers add a beautiful aroma reminiscent of coconuts.
No one seems to know how the dandelion got it’s name. Some say it is the jagged leaf which resembles a lions teeth! The young leaves are delicious in a salad but our Spring Edition uses the stem of the plant to bring delicious liquorice notes to the gin.
Coltsfoot was once used in confectionary and also as a short term relief for dry coughs. We have used coltsfoot from the distillery garden to provide sweeter elements to the Spring Edition

Spring gin is deliciously crisp, light and fresh. Underneath hint of something I can’t quite describe, vaguely floral but not too sweet. Bought a bottle when I visited the distillery. Really love it, so brilliant I am able to buy the refill pouches, great idea!
