Spruce is the conifer widely used as our Christmas trees! It grows plentifully in the Highlands of Scotland and we have a lovely forest full of conifers not a mile from the distillery. Spruce tips can eaten as they are, used in cooking or to make beer! Sailors of long ago used to make spruce essence to take on long voyages to use to make beer. We use spruce tips to impart a lovely fresh pine note with citrus elements to our Winter Edition to invoke feelings of a cool, crisp winter’s day.
The leaves of this perennial, woody shrub have a bright citrus flavour – ideal for adding an extra citrus layer of flavour. Grown in our distillery geodome.
Juniper is the predominant botanical – otherwise it just wouldn’t be gin! We select our juniper from two different countries. Both junipers are subjected to a vapour infusion process and the Bulgarian juniper gives lemon sherbert notes, whilst the Italian juniper gives a real warmth and depth to the flavour of the gin.
