Ingredients

^{50ml Rock Rose Gin Spring Edition}
^{25ml Lemon juice}
^{25ml Elderflower cordial}
^{25ml Sugar syrup}
^{50ml Tinned, frozen or fresh gooseberries, cooked with a little sugar, blended to a puree and sieved}
^{1 egg white}
^{Garnish: Shortbread biscuits}

Recipe

^{Put all ingredients except the shortbread into a cocktail shaker with ice and shake well}
^{Fine strain into a coupe glass and garnish with crumbled shortbread}
